What it is for
Quilting is a compromise between warmth and shape: filling would slump without the stitching, and the stitching is what turns a bag of fluff into a garment. The puffs are the visible record of that argument.
How it works
Filling sits between two layers and is held by a grid of stitch lines. Each panel puffs. The stitch pulls the surface into a dimple. Every corner rounds by the padding thickness. The outer fabric carries a slight sheen that runs along each puff.
When to use it
Use it for fashion, winter and anything that should look insulated. Avoid it for hard objects, where padding makes no sense.
Told apart from its neighbours
Inflatable is sealed and holds air, so it has no stitch grid and a glossier skin. Embroidered Patch is thread filling a surface rather than padding behind it. Knitted has no filling at all.

What goes wrong
A smoothly inflated shape comes back with no seams. Ask for a regular grid of stitch lines and a dimple where each one pulls.
Leave out
flat panels, sharp corners, a thin surface, matte flatness, an unquilted expanse, hard edges
Watch for
The dimple at each stitch is what proves it. Padding without the pull at the seams reads as an inflated shape rather than a quilted one.
